Why add pitted black olives to remojón
Black olives are a key ingredient in this recipe, but choosing good quality makes the difference:
- They provide intense flavor and balance the acidity of the orange
- They improve the texture of the dish
- They make it easier to eat since they are pitted
- They reinforce the Mediterranean character of the recipe
Tips for a perfect remojón
- Use sweet oranges to balance the cod
- Do not overdo the salt (the cod already adds some)
- Let it rest for 10–15 minutes before serving
- Add the olives just before serving to maintain their texture
