Why add pitted black olives to remojón

Black olives are a key ingredient in this recipe, but choosing good quality makes the difference:

  • They provide intense flavor and balance the acidity of the orange
  • They improve the texture of the dish
  • They make it easier to eat since they are pitted
  • They reinforce the Mediterranean character of the recipe

Tips for a perfect remojón

  • Use sweet oranges to balance the cod
  • Do not overdo the salt (the cod already adds some)
  • Let it rest for 10–15 minutes before serving
  • Add the olives just before serving to maintain their texture
